3 Organic Ingredients
We know you are concerned about additives or mystery ingredients (whose names you cannot pronounce). Our chocolate, no matter the size or shape, has just 3 ingredients: organic cocoa beans, organic cane sugar, and organic cocoa butter. (We are offering a couple of milk chocolates now, so those have an additional ingredient.)
(Jason likes to say our chocolate has 2-1/2 ingredients, since cocoa beans are about half cocoa butter.)
The additional cocoa butter gives our chocolate a creamier texture with a soft mouth feel.
Our focus is on the taste of the chocolate itself, so we are making 75% dark chocolate from single sources. When you get chocolate from us, you will know where the beans came from and their variety. As you taste the different varieties, you will quickly learn which is your favorite, whether it is a Criolo, Forestero, Trinitario, or another variety.
Our milk chocolate is offered in two types: standard milk, using the best organic whole milk powder, and a vegan version, using coconut milk powder instead of milk powder. In both cases, we make a 48% dark milk chocolate.
Sustainable Farming
We know you are concerned that the people who farm the chocolate are treated well and paid fairly for their chocolate. Our beans are purchased through Fair Trade and Direct Trade agreements. Our suppliers ensure that there is no child labor, no slave camps, and the people growing the food are the people being paid a fair price for the food.
Every effort is made to make sure the farmers are being actively supported in a sustainable manner, both financially and ethically. You can feel good that the chocolate you enjoy is providing a good living for the farmers who grow the cocoa beans and the land is being maintained sustainably.
Low Environmental Impact
We know you are concened with environmental impacts - so are we! We are located in a redwood forest near the Pacific Coast. The last thing we want to do is mess up the land, the ocean, the air. As much as possible, we are using packaging that is recyclable.
Paper boxes, paper sleeves, and foil wrappers are recyclable. We have just found a source of kraft paper food grade bags that are compostable.
Small and Local Business
We know you like to support small and local businesses. We are a very small company - just Jason and Geri - on the Mendocino Coast. As a California Cottage Food Operation, we usually sell locally. At this time, we are shipping our chocolates on demand, and do not have a fixed shipping cost. Contact us for a shipping quote.
